I just munched down a 12 oz bag of steamed edamame, giving my body the following:

Edamame* 120 calories
* 9 grams fiber
* 2.5 grams fat
* 1.5 grams polyunsaturated fat (0.3 grams plant omega-3 fatty acids)
* 0.5 gram monounsaturated fat
* 11 grams protein
* 13 grams carbohydrate
* 15 mg sodium
* 10% of the Daily Value for vitamin C
* 10% Daily Value for iron
* 8% Daily Value for vitamin A
* 4% Daily Value for calcium

Since I’m no longer at my day job doing corporate performance management evaluations on our websites, I have the time to surf the web for edamame recipes, and I came up with some good ones! Once I try them, I will report back.

Do you have any good edamame recipes that you’d like to share? I’d love to hear them! Oh and do any of you grow them in your garden? I read they are one of the easiest things in the world to grow, and the word easy caught my eye!

I haven’t tried making this myself (yet!) but I had the most addictive edamame at a place called VOX recently. It was your basic edamame but with truffle oil and sea salt! Soooo good!
